		<description><![CDATA[Burritos are a firm favourite of Los Bandidos, and a delicious meal regardless of your choice of filling! We have found a recipe for Burritos which is as close to ours as it gets! Burritos are available with a filling choice of vegetables, chilli, beef, chicken or prawns. Ingredients 2 tablespoons butter 1/2 cup chopped green onion 1 clove garlic, minced 7 cups shredded, cooked chicken meat 1 tablespoon chili powder 2 1/2 cups chicken broth, divided 1 (16 ounce) jar picante sauce, divided 1 cup uncooked long grain rice 1/2 cup sliced black olives 3 cups shredded Cheddar cheese, divided 12 (10 inch) flour tortillas &#160; Directions To Make Chicken Mixture: In a large skillet over medium heat, melt butter and saute green onion and garlic until soft; stir in chicken, chili powder, 1/4 cup broth and 3/4 cup picante sauce. Heat through, then set aside. To Make Rice: In a large saucepan, bring rice and remaining 2 1/4 cups broth to a boil. Reduce heat, cover pan and simmer for 20 minutes. Stir in remaining 1 1/4 cups picante sauce, cover and simmer for another 5 to 10 minutes or until rice is tender. Meanwhile, preheat oven to 375 degrees F (190 degrees C). To Assemble Burritos: Stir chicken mixture into rice, then add olives and 2 cups of the cheese. Mix well. Spoon 1 cup of filling onto each tortilla, off center. Fold sides and ends over filling, then roll up. Arrange filled tortillas in two 9&#215;13 inch baking dishes and sprinkle remaining cup of cheese on top. <li><span style="color: #000000;">2 cooked boneless, skinless chicken breasts</span></li>
<li><span style="color: #000000;">2 tablespoons taco or burrito seasoning</span></li>
<li><span style="color: #000000;">2 tablespoons water</span></li>
<li><span style="color: #000000;">2 tablespoons mild or hot salsa</span></li>
<li><span style="color: #000000;">3/4 cup sour cream</span></li>
<li><span style="color: #000000;">1 small can/jar chopped green chiles (hot), drained</span></li>
<li><span style="color: #000000;">1/4 cup green onion, thinly sliced</span></li>
<li><span style="color: #000000;">1/4 cup of chopped green peppers</span></li>
<li><span style="color: #000000;">1/4 cup of chopped red onion</span></li>
<li><span style="color: #000000;">1 bag white corn tortilla chips</span></li>
<li><span style="color: #000000;">1 1/2 cups shredded Monterey Jack or Pepper Jack or Cheddar cheese</span></li>
<li><span style="color: #000000;">1/2 cup tomato, seeded and chopped</span></li>
<li><span style="color: #000000;">bowls of salsa, sour cream, and guacamole for dipping</span></li>
</ul>

<h3><span style="color: #008080;">Method:</span></h3>
<ol>
<li><span style="color: #000000;">Chop chicken into bite-sized pieces. In a medium saucepan, combine chicken, taco seasoning, water, and salsa over mdium heat. Cook mixture until chicken is heated through and sauce is well-blended.</span></li>
<li><span style="color: #000000;">Remove mixture from heat and allow to cool to room temperature. </span></li>
<li><span style="color: #000000;">To cook the nachos, use a pizza stone and preheat the stone for about 15 minutes on 400 degrees. If you dont have a pizza stone, dont worry; Use a griddle, or bake in the oven in a non stick dish. Then take out the pizza stone with an oven mitt ( cause it will be hot… ) and start to place the nachos on the stone.We try and get the nachos close together but not overlap them.  Once placed on the stone, we sprinkle a little cheese over the chips and then place the chicken mixture on( making sure not to place an extra liquid on the chips ).  After the chicken, Iwe go with the peppers, chilies, and onions spreading a liberal amount over the chips.  Once complete we add the cheese.  Another tip we try to follow is not to make the chips disappear with the cheese ( we spread a nice amount but don’t over do it ). If your having  a large crowd we tend to make multiple batches because we don’t like to layer the chips due to the soggy possibility.</span></li>
<li><span style="color: #000000;">We then bake them on the middle rack at 400 degrees until cheese is melted through and the chips start to crisp around the edges.  We then top with tomatoes, and green onions and serve with salsa, sour cream and guacamole.</span></li>
